Sinking cake

My cakes don't flop but they sometimes sink a bit in the middle. What causes this and can it be prevented?

Hi Anne,

Your cakes may be sinking for one of the following reasons:
- Oven door was opened too soon.
- Oven was not hot enough.
- Too much liquid in your cake mixture.
- Too much baking powder or baking soda caused an over-enthusiastic initial rise and then collapse.

Try adjusting your cooking method and or recipe slightly to account for those possible causes and you should have un-sunk cakes. :)
