Honey and mustard chicken casserole

The smell of a homemade casserole cooking away in the oven is enough to make the day’s stresses just drift away. It’s easier to make than you’d think and with a simple honey and mustard flavour and some zesty gremolata, it makes for a hearty, any night meal.

Ingredients

Serves: 4 people

1 onion, sliced
4 Tbsp honey
4 Tbsp Dijon mustard
8 chicken pieces
Salt and pepper, to taste

For the gremolata
3 garlic cloves, roughly chopped
Zest of 1 lemon
1 cup fresh parsley (flat-leaf parsley if you can get it)

Method

1. For the gremolata, finely chop the parsley, garlic and lemon zest with a chef’s knife, mix together and set to one side. If you’ve got a Magimix, pop all of these ingredients in and blitz in seconds.

2. To prepare the chicken, preheat the oven to  200°C. Place the sliced onion and chicken pieces into a casserole dish. Mix in the honey and mustard and allow to marinate for at least half an hour. Season with salt and pepper and roast, with the lid off, for 50 minutes. The honey will brown your chicken nicely.

3. Remove from oven and sprinkle with gremolata.

4. Serve hot or cold and with roast potatoes or a simple salad.

We hope this dish is a winner for you and your family.
